Spicy Roasted Cauliflower

Roasted Cauliflower is a go to for me, I love its crispy edges and creamy inside and it goes with just about anything!

A little suggestion, if you wanted it really crispy cut the cauliflower up super small.

Here's what you’ll need for this sexy beast!

 

  • 1 medium head cauliflower
  • 3 tablespoons grapeseed or mild olive oil
  • 1 teaspoon or as I like to say a sprinkling of chili powder
  • sprinkling of smoked paprika
  • sprinkling of fine sea salt over the whole shabang
  • Freshly ground black pepper all over the top
  • 1 lime, cut into wedges
  • Spread’em cilantro pesto

 

Here's how it all goes down!


Crank the oven to broil aka 500 coming from the top. Chop the cauliflower into bit size bits, remember the smaller the crispier! Then sprinkle with the spices and oil and massage with your hands. Don’t be shy here, pretend that they’ve had a hard day and they’re paying you good money to de-stress their aching crowns! Once you get all the good stuff into the nooks and crannies put them in the oven. The first 10-15 mins can go unsupervised but after that be sure to toss them around in there at regular intervals every 4-5 mins. You’ll know when they’re done cause they will look almost burnt and some around the edges might be. Don’t worry you didn’t screw it up! That’s how it’s suppose to look! Now pull her out of the oven and squeeze with the lime juice and drizzle some spread’em cilantro dip over the top to finish. Don’t forget to pop a few of the little crispy bits from around the edges in your gob, that’s the best part!

Now pat your self on the back! Well done my friend well done! Serve it up maybe with some marinated tofu or pulled chicken on a bed of rice or polenta. Be prepared for people to ask you for the recipe cause this little wonder is gonna be a hit!
