Apricot Scones

Here’s what you will need:

  • 2 cups of flour
  • 1 tbsp baking powder
  • a pinch of salt
  • 100 g of Spread'em Kitchen Buttery Spread, cold
  • 150 g The Delight
  • 80 g chopped dried apricots
  • 1 tbsp of plant-based milk

 

  1. Preheat your oven to 400 F
  2. in a big bowl mix together flour, baking powder and salt
  3. Gently mix in the buttery spread, the Delight and apricots. Don’t knead the dough too much.
  4. Add milk. If the dough feels wet and sticks to your hands, add more flour.
  5. Refrigerate the dough for at least 15 minutes.
  6. Roll the dough out to a 1” – 1 1/2 “sheet and slice it into wedges.
  7. Place the wedges on a baking tray leaving some space between each scone.
  8. Bake for 20-25 minutes until golden.
  9. Spread them with jam or butter, or simply eat them plain. Enjoy!
