Spicy Carrot Fennel Pasta with Lime

I was in a pinch and only had a few things in the fridge and this is what I came up with and gawd was it ever good!

Heres what you’ll need…

Enough time to boil some pasta or use zucchini noodles instead
Spread’em Spicy carrot dip
Fresh fennel shaved or cut as thin as you can
handful chopped cilantro
drizzle of olive oil
Lime zest (don’t forget to wash it)
A few tablespoons of pasta water
2 tbsp Black sesame seeds or white
1/4 cup red onion diced
salt and papper to taste
* feel free to add some extra protein to this dish like crispy tofu, ethically raised chicken or fish like salmon, cod or trout would be good

Put it all together:

Boil the water for the pasta just before you put the pasta in toss the shaved fennel in there for a minute or two just to sweeten it up. remove the pot from the heat and fish it out with a spoon. Once it’s all out put the pot back on the burner and add the pasta and cook till it’s how you like it.

While you’re waiting for the pasta dice the red onion and chop the cilantro. Drain the water from the paste remember to save a little bit, like 2 shot glasses worth. Now add the pasta back to the pot and 3 good size dollops of spicy carrot dip combine that with the pasta and use the pasta water to help thin it out into more of a creamy sauce.  Now let’s add the blanched fennel, red onion, and cilantro. Give that a stir woohoo! now were talking!! It’s starting to take shape, I’m getting excited. Finish with the drizzle of olive, lime zest and the sesame seeds and give her a final mix-o-la! What a magnificent beauty! Looks kinda like cheese sauce.

Why it’s good for you… Sesame seeds are high in Iron which is good for your blood cells and B-12 which helps you find your happy place. Carrot dip is high in Vitamin A  which is essential for healthy vision, teeth, skeletal tissue and skin … so in short it makes you beautiful and strong! And we can’t forget Copper. Copper  helps your body make red blood cells and keeps nerve cells and your immune system healthy. It also helps form collagen, a key part of bones and connective tissue. Copper may also act as an antioxidant, getting rid of free radicals that can damages cells and DNA. Copper helps the body absorb iron, and your body needs copper to make energy.
