So lets jump on the wagon of baked bacon wrapped avocados! He’s a quick little power breakfast or snack that will be sure to keep you going!
But wait you’re not into meat that’s ok I’ve tried this with sliced smoked tofu and it’s delicious too!
All you’re gonna need is…
2 ripe medium avocados
150 g thinly sliced bacon (8 pieces) sourced from an ethical local farm or a few slices smoked tofu
A spreading of jalapeno cheesy cashew ( spread’em)
1 tsp honey
Sea salt & fresh pepper
4-6 pieces of toasted bread, seed bread or try polenta patty!
Preheat oven or toaster oven to 200 ºC / 400 ºF. Cut the bacon into half, giving you 16 small slices. Cut you avocados in halves, remove the stones and use a large spoon to scoop out the flesh in one pieces. Slice 4 wedges pr half avocado. Gently wraps each avocado wedge in a pieces of bacon and place on a lined baking sheet. Bake in the oven for 15 min.
Toast your bread crispy, spread out the jalapeno cheesy cashew in a generous layer. At last add the warm bacon wrapped avocado wedges, drizzle with honey and top with a little fresh cress.
